01 - Preheat oven to 400°F. Pat chicken thighs dry, then season both sides with salt, black pepper, garlic powder, and smoked paprika.
02 - Heat a large oven-safe skillet over medium-high. Add oil, then sear chicken thighs 2 to 3 minutes per side until golden brown. Remove from skillet and set aside.
03 - Reduce skillet heat to medium. Add butter and melt fully. Stir in honey, soy sauce, minced garlic, apple cider vinegar, and Dijon mustard. Simmer for 1 to 2 minutes until slightly thickened.
04 - Return chicken thighs to skillet. Turn to evenly coat with glaze.
05 - Transfer skillet to oven. Bake 20 to 25 minutes, basting once or twice, until internal temperature reaches 165°F and chicken is cooked through.
06 - Remove from oven. Spoon extra sauce over chicken. Garnish with parsley or green onions. Serve hot with rice or steamed vegetables if desired.
