- Heat a large skillet over medium-high heat. Add ground beef and cook, breaking apart with a wooden spoon, until browned throughout (5-7 minutes). Drain excess fat from the skillet.
- Sprinkle taco seasoning over the cooked beef. Pour in water and stir thoroughly to combine. Reduce heat to low and simmer for 3-5 minutes until sauce thickens. Remove from heat and keep warm.
- Preheat oven to 400°F.
- Arrange tortilla chips in a single layer across large baking sheets or oven-safe serving platters. Avoid overcrowding for even cheese melting.
- Distribute shredded cheddar and Monterey Jack cheeses evenly over the chips, ensuring good coverage.
- Bake for 5-7 minutes until cheese is completely melted and bubbly. Watch closely to prevent burning.
- Carefully remove baking sheets from oven. Transfer cheesy chips to your main serving table or buffet station.
- Arrange bowls of seasoned beef, nacho cheese sauce, black beans, sour cream, guacamole, pico de gallo, olives, jalapeños, tomatoes, red onion, and cilantro around the cheesy chips. Provide serving spoons for each topping.
- Place lime wedges alongside the toppings. Guests can now build their own loaded nachos by spooning beef and toppings over the cheese-covered chips.
