01 - In a large pitcher, combine coconut water, orange juice, grated ginger, lime juice, and honey or maple syrup. Stir thoroughly until sweetener is fully dissolved.
02 - Taste the mixture and adjust sweetness or acidity level by adding more honey or lime juice as needed.
03 - Fill two serving glasses with ice cubes to the top.
04 - Pour the coconut-orange mixture over the ice in each glass. Garnish with an orange slice and fresh mint leaves. Serve immediately while chilled.
