01 - Set a large skillet over medium-high heat and add the butter, allowing it to melt and coat the bottom of the pan.
02 - Add the sliced kielbasa in a single layer and cook until golden brown on both sides, approximately 4 minutes. Remove and set aside.
03 - In the same skillet, add the chopped onion and sliced potatoes. Cook for 6 to 8 minutes, stirring occasionally, until the potatoes begin to soften and develop light color.
04 - Stir in the minced garlic, diced bell pepper, and broccoli florets. Sauté for 3 to 4 minutes until fragrant and the vegetables begin to tenderize.
05 - Return the browned kielbasa to the skillet. Sprinkle with smoked paprika, dried oregano, salt, and black pepper. Toss everything together until evenly combined.
06 - Reduce heat to low. Sprinkle the shredded cheddar cheese evenly over the entire mixture and cover the skillet with a lid. Let cook for 3 to 5 minutes until the cheese is fully melted and the potatoes are fork-tender.
07 - Remove from heat, garnish with chopped fresh parsley if desired, and serve immediately while hot.
