01 - Preheat your oven to 400°F.
02 - Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until soft, about 2 to 3 minutes.
03 - Add ground beef, breaking it up with a spatula. Cook until browned, approximately 5 to 6 minutes.
04 - Stir in cumin, smoked paprika, chili powder, salt, pepper, tomato paste, and water. Simmer for 2 to 3 minutes until thickened. Remove from heat.
05 - Spread tortilla chips evenly on a large baking tray.
06 - Spoon cooked beef mixture over the chips. Sprinkle with cheddar and Monterey Jack cheese.
07 - Bake in the oven for 8 to 10 minutes, until the cheese is melted and bubbly.
08 - Halve avocados, remove pits, and scoop flesh into a bowl. Mash with lime juice. Stir in diced tomato, red onion, cilantro, salt, and pepper until combined.
09 - Remove nachos from oven. Top with diced tomato, spring onions, and jalapeño slices if using.
10 - Serve immediately with fresh guacamole on the side or dolloped on top.
