01 - Preheat the oven to 400°F. Line a baking sheet with parchment paper.
02 - Place the thawed puff pastry on a lightly floured surface. Roll out gently to remove creases.
03 - Set the Brie wheel in the center of the pastry. Spread the apricot preserves evenly over the top of the Brie. Sprinkle with chopped pecans and drizzle with honey, if using.
04 - Fold the pastry up and over the Brie, trimming excess pastry if needed. Pinch to seal and flip the bundle seam-side down onto the prepared baking sheet.
05 - Beat the egg with water to make an egg wash. Brush the pastry with the egg wash for a golden finish.
06 - Bake for 18–20 minutes, or until the pastry is golden brown.
07 - Let rest for 5–10 minutes before serving. Garnish with fresh thyme if desired. Serve warm with crackers or sliced baguette.
