Baked Brie Apricot Pecans (Printable)

Creamy Brie wrapped in puff pastry with apricot preserves and pecans, baked to golden perfection.

# What You'll Need:

→ Cheese

01 - 8 oz wheel Brie cheese

→ Pastry

02 - 1 sheet frozen puff pastry, thawed

→ Toppings

03 - 1/4 cup apricot preserves
04 - 1/4 cup pecans, roughly chopped
05 - 1 tablespoon honey (optional)

→ Egg Wash

06 - 1 large egg
07 - 1 tablespoon water

→ Garnish

08 - Fresh thyme sprigs
09 - Crackers or sliced baguette, for serving

# Step-by-step:

01 - Preheat the oven to 400°F. Line a baking sheet with parchment paper.
02 - Place the thawed puff pastry on a lightly floured surface. Roll out gently to remove creases.
03 - Set the Brie wheel in the center of the pastry. Spread the apricot preserves evenly over the top of the Brie. Sprinkle with chopped pecans and drizzle with honey, if using.
04 - Fold the pastry up and over the Brie, trimming excess pastry if needed. Pinch to seal and flip the bundle seam-side down onto the prepared baking sheet.
05 - Beat the egg with water to make an egg wash. Brush the pastry with the egg wash for a golden finish.
06 - Bake for 18–20 minutes, or until the pastry is golden brown.
07 - Let rest for 5–10 minutes before serving. Garnish with fresh thyme if desired. Serve warm with crackers or sliced baguette.

# Expert Advice:

01 -
  • The contrast between warm, gooey Brie and crisp, flaky pastry is absolutely irresistible
  • It looks impressive but comes together in under 30 minutes with minimal effort
02 -
  • The pastry needs those few minutes of resting time or the cheese will pour out too aggressively when you cut into it
  • Flip the wrapped bundle seam-side down before baking so the sealed side stays hidden and pretty
03 -
  • If the pastry starts getting too dark before the Brie is melted through, tent loosely with foil for the last few minutes
  • Sprinkle a little flaky sea salt on top right after baking to make the sweetness pop
